Breakfast at Tiffany's

Even if you are not named Tiffany, you can still make this easy, delicious breakfast casserole. (With permission)

The only catch is that you need to prepare your casserole the night before, so this means planning ahead.  Ouch.  But this early morning yum is worth throwing out procrastination.  At least for the day.



Breakfast At Tiffany's Casserole
Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients:
4 slices white bread, crusts removed
4 eggs, slightly beaten
1/2 cup milk
1 teaspoon dry mustard
1/2 teaspoon dried minced onion
5 slices bacon, cooked and crumbled
1 cup shredded mild Cheddar cheese

Preparation:
Place bread in a lightly greased 8-inch square baking dish and set aside. Combine eggs, milk, dry mustard and dried minced onion; pour over bread.  Sprinkle bacon over casserole.  Cover and refrigerate for 8 hours.  Remove from refrigerator, let casserole stand at room temperature for 30 minutes.  Bake, covered, at 350 degrees for 20 minutes.  Uncover, sprinkle with Cheddar cheese and bake an additional 5 minutes.  Let casserole stand 5 to 10 minutes before serving.  Serves 4.
